Mushroom Lunch

Just thought I would share what we had for lunch today because it was soooo delicious but soooo bad for us! We made a delicious mushroom sauce, cooked bacon, and had left over roast chicken... took a piece of toast, put bacon on it, then chicken, then smothered it in mushroom sauce. DELISH!

Green Eggs and Ham

mini cheesecakes

So I haven't technically tried these yet but I thought I should post the recipe seeing as I haven't added any food in a long time...

Ingredients:
1 12 ounce package of vanilla wafers (or a cookie like it, you could also use a cookie of your choice like oreo crumbs!)
1 8 ounce packages of cream cheese
3/4 c sugar
2 eggs
1 tsp of vanilla extract (i use pure)

Do these things:
Pre heat oven to 350
Put 1/2 tbsp of crushed cookie into muffin tin, i lined mine with paper, you could also use tinfoil.. I also used the mini ones so they were extra cute. :)
Cream the cream cheese, sugar, eggs and vanilla, but not too much!
Fill the tin cups almost to the top
Bake for 15 mins
Top with pie filling, or whatever your heart desires.
I am topping mine with all sorts of things:
mini m&m's
chocolate sauce
raspberries
blackberries
white chocolate
OH and for fun I put some coconut in with the cookies on one batch!
I am so dangerous!
P.s I need to show off our Christmas present....
SO NICE.

Naan Bread ala Crab

Okay so this was delicious!!!
- Naan bread (however many you can eat)
- spinach
- tomatoes
- crab (or king crab the flavoured stuff)
- feta cheese
- olive oil
- oregano
- basil
- pepper
- turkey bacon
Do these things:
- mix olive oil, pepper, oregano and basil together and brush it onto the naan breads
- if the turkey bacon isn't pre cooked you should cook it, if it is cut it into bite sized bits and sprinkle on the naan
- cut or rip spinach, crab, turkey bacon, and tomatoes and place them on the naan breads
- sprinkle with feta
- cook for 10 mins at 450
- a broil setting would also work
- finish it with coarse salt and a splash of olive oil

... yum
the only thing it could have used was some red onion and black olives.

This recipe was created by John and was divulged much to his 'shigrin'
Also, this dish was enjoyed by my mouth this evening.

BBQ Chicken Pizza

I haven't cooked more then twice since I started dating John, but there is still one thing I know how to make well and that is pizza! Last night I made two so that you can eat pizza the next day lol.
Recipe
2 Mediterranean Flat breads (whole wheat)
1 and a half Red Onion sliced thin
1 can of pineapple (cubes, crushed, etc)
BBQ Sauce
Rotisserie Chicken (ready to eat kind, chipotle or whatever is ready)
Cheese (I use goat cheddar and goat mozza)
1 clove garlic (chopped fine)
butter
brown sugar.
Ready?
Ok.
Heat butter (or sub olive oil) and Brown sugar in a pan with the red onion
keep this on lowish heat until you can see through the onions.
Right before you take the onions off the heat add the garlic
spread BBQ sauce over the pizza doughs
tear off chunks of chicken and place them on the pizza's
add onions and grated cheese
then pineapple
cook for 15 or until cheese is melted and crust is brown.
You can add mushrooms or yellow peppers to this, or a sprinkle of feta at the end.
point is its supposed to be simple yet delicious so when you add too many flavours it becomes a whole new pizza.

Salmon

Last night we had salmon on top of spinach and couscous. DELISH.
Sauce:
Maple syrup
Soya Sauce (equal parts)
chopped garlic
S n P
dash of onion powder
touch of ground ginger
dash of sesame seed oil (don't over do this one, a little goes a long way)
dash of rice vinegar
marinate the salmon in this!
blanched the spinach in the same pan as the salmon so it had the same flavour
and shitake mushroom couscous.
:)

Ding Dong

Best Vietnamese in Saskatoon by far. Small, dingy, and the owner barely speaks english, it does not get better then that. Today I switched it up, started with Vietnamese rolls and then moved onto satay chicken and squid with chili sauce. Ding Dong is located downtown Saskatoon, and is highly recommended by me.
